Creamy Potato Soup

Ingredients
- (4-5 medium) Potatoes, diced
- (1/2) Onion, diced
- (2 medium) Carrots, diced
- (2 Tbsp) Butter
- (32 oz) Chicken broth
- (32 oz) Milk
- (1 large) Egg
- (1/2 cup) Flour
- (1-2 cups) Potato Flakes
- Salt and Pepper to taste
Directions
Melt butter in large pot.
Sautee onion and carrot in butter until onion is translucent and tender.
Add chicken broth and potatoes, bring to a light boil, then simmer until potatoes are tender.
Use a potato masher to slightly mash the potato and carrot pieces.
Add the milk and gently heat to just below boiling.
In a small bowl, mix egg and flour together to make a dough for the dumplings.
Using one spoon, scoop a small amount of dough and with a second spoon, drop the dough into the hot liquid. The dumplings will puff up as they cook, so the bigger you start with the bigger they'll be in your bowl!
Stir frequently.
After about 10 minutes, add potato flakes a little at a time to thicken the soup to your desired consistency.
Add salt and pepper to your preferred seasoning, and it's ready to serve!
