Crispy Baked Pork Cutlets

Ingredients
- (4) Pork cutlets
- (3 tbsp.) Dijon mustard
- (2/3 cup) Panko breadcrumbs
- (1 tsp) Dried thyme
- (dash) Salt and pepper
- (1 tbsp) Olive oil
Directions
The first time I made these, I (accidentally) omitted the step of pan-frying the cutlets before placing them in the oven. Oops!
Honestly, I love simple, so one less step was great for me! I did bake them longer (probably a good 20 minutes total, flipping partway through). And they would have been a little crispier over the whole surface if I'd pan fried them first, but they still tasted great!
We served our cutlets alongside spaghetti squash with pasta sauce topped with parmesan cheese. Delish!
Preheat oven to 450 degrees.
Stir the thyme, salt, pepper, and mustard together.
Spread the mustard mixture evenly over the pork.
Coat each piece of pork with the panko breadcrumbs.
Heat an oven-safe skillet over medium high heat. Add the olive oil and once it is hot, lightly fry the pork for 2 minutes on each side or until brown and crispy.
Place the whole skillet in the oven and bake for 8-10 minutes until cooked to your liking.
