Best Veal Burgers Ever

Ingredients
- (1 lb) Veal, Ground
- (1 ) Eggs, pastured
- (about 2 Tbsp) Yellow Corn Meal
- (1/2 tsp) Sea salt
- (1/4 tsp) Black pepper
- (1 1/2 Tbsp) Horseradish
- (4 strips) Pork Bacon
- Cheese of your choice (I used Monterey Jack)
- (1) Small onion, diced and sauteed
- (4) Buns, lightly toasted
Directions
Mix veal, egg, cornmeal, salt and pepper. Form into patties. I pan-fried the burgers in an iron skillet. If you want to grill them, you may want to add a bit more cornmeal to help them stick together so they don't fall apart before they are seared. Sear both sides, then reduce heat to cook to desired doneness. Add cheese just a few minutes before finishing to melt it.
Fry bacon. If you cut the slices in half they will be about the perfect size for putting two halves on top of your burgers. Add sauteed onions to the burger on its toasted bun, and any other condiments desired. Voila!
