- (9 hard boiled) Eggs, pastured
- (1/4 cup) Mayonnaise
- (1/4 cup) Sweet relish
- (1/2 teaspoon) Mustard
I like to hard boil eggs in the instant pot, and they peel super easily, even fresh ones! Simply cook for 5 minutes, allow 5 minutes of natural pressure release, then after opening the vent and safely removing the lid, cool eggs for 5 minutes in an ice water bath.
Peel and halve eggs. Remove yolks into a separate bowl.
In a separate bowl, mix mayonnaise, relish and mustard together. Add this mixture to the yolks and stir well.
Using spoons, place a dollop of yolk mixture in each white.
Sprinkle paprika on each yolk.
