The great thing about this recipe is the amounts don't have to be exact. If you're serving more people, add more of everything. If you want heavier on the veggies, kick those up to bigger amounts or be creative and add other things :)
Melt butter in a large skillet on medium heat.
Slice zucchini and asparagus into bite-sized pieces, saute in butter until veggies are nearly tender.
Cube summer sausage into bite-sized pieces and add to veggies in skillet.
Beat eggs in a bowl. Check skillet to see if there is still enough butter to help keep the eggs from sticking (add a little more if you think it needs it :) ). Once meat has heated through, add eggs to skillet and cook, turning frequently until eggs are fully cooked.
Add salt and pepper if desired, and top with the grated cheese of your choice for a little extra creamy deliciousness!
