Feed a Crew Beef Stew

Ingredients
- (2 lbs) Beef Stew Meat
- (4 cups) Water (enough to cover meat)
- (1 quart) Tomato Juice
- (5-6) Medium potatoes, diced
- (4) Carrots, diced
- (1) Parsnip, diced
- (1) Medium zucchini, diced
- (1) Stalk celery, diced
- (1/2) Small head of cabbage, shredded
- (1/2 cup) Lentils
- (2 1/2 tsp) Sea salt
- (1/2 tsp) Black pepper
- (1 tsp) Parsley
- (1/2 tsp) Basil
- (1/2 tsp) Oregano
- (1/4 tsp) Thyme
- (1 tsp) Turmeric
- (2) Bay leaves
- (Dash) Red pepper
- (1) Medium Onion, diced
- (2 Tbsp) Apple cider vinegar
- (1 Tbsp) Coconut oil
- (2 tsp) Bragg's Aminos
Directions
This can be made on the stovetop or in a crock pot. I made it on the stove, but allowed the meat to cook most of the day and it was melt in your mouth tender.
In a large pot, brown the meat to add extra flavor. Add water, vinegar, and coconut oil, and bring to a boil. Reduce heat and allow meat to simmer several hours to desired tenderness. (If using a crock pot, you can still brown the meat first, or if not, you can just add all ingredients at once and cook on low all day. Might want to reduce amount of water for the crock pot method.).
Add juice, all vegetables and seasonings (i.e., the rest of the list), and cook until veggies are tender.
