Italian Sausage and Veggie Soup
I had a few ingredients I wanted to use recently, so I decided to make something up. I sort of surprised myself with how good it was, haha! I didn't write it down at the time, though, so this is the recipe as my memory serves. Feel free to tweak and share in the comments.


  • (1 lb) Pork Sausage, Sweet Italian
  • (1 quart) Chicken broth
  • (1 quart) Tomato juice
  • (2 medium) Zucchini, diced
  • (16 oz) Corn, frozen
  • (1/2 cup) Shiitake mushrooms, dehydrated (or any preferred variety of mushroom)
  • (1/4 cup) Lentils, dried
  • (1 cup) Rotini noodles
  • (1 tsp) Sea salt
  • (1/2 tsp) Oregano
  • Black or red pepper to taste


In a large pot, brown sausage.

Add broth and juice and return to a boil while adding zucchini, corn, mushrooms, lentils and noodles.

Add seasonings.

Reduce heat to simmer and cook until mushrooms are reconstituted and lentils and noodles are done. If too much liquid is absorbed as it cooks, you can add a little water or extra broth or juice.
