Sausage & Egg Muffin Cups

So easy! These hearty little breakfast "muffins" are sure to fill you up!

Ingredients
- (8 ounces) Beef Breakfast Sausage
- (9) Eggs, pastured
- (5 ounces) Mozarella cheese
- (1) Sweet red or orange pepper, chopped
Directions
Preheat oven to 350 degrees
Brown sausage and pepper together
Put a bit of the sausage and pepper mixture in the greased muffin cups
Add some mozarella on top of the sausage
Beat eggs, pour mixture over the sausage and cheese
Bake for 20 minutes, or until eggs turn golden brown
