Sausage & Egg Muffin Cups

So easy! These hearty little breakfast "muffins" are sure to fill you up! Plus, they're great for making ahead and for a quick nutritious breakfast through the week.

Ingredients
- (9) Eggs, pastured
- (5 ounces) Mozarella cheese
- (1) Sweet red or orange pepper, chopped
- (8 ounces) Pork Breakfast Sausage
- (1/4 cup) Milk (optional)
Directions
Preheat oven to 350 degrees.
Brown sausage and pepper together.
Put a bit of the sausage and pepper mixture in the greased muffin cups.
Add some mozarella on top of the sausage.
Beat eggs, pour mixture over the sausage and cheese (I added a little milk to the eggs too, and it made the muffins a little "fluffier").
Bake for 15-20 minutes, or until eggs turn golden brown.
Even when greased, the egg mixture wants to stick to the muffin tins. Next time I may try using cupcake liners!
